Domaine des Salamandres

The Domaine des Salamandres is a family project. A family that worked together to make their project a success, with Sylvain, the father, at the helm of fruit and wine production as well as agricultural work, Denise, the mother, in charge of operations, administration, and customer service, Karelle, the eldest daughter, who joined full-time in 2016 to support Sylvain in the vineyard and orchard and to manage sales and distribution, and Camylle, their youngest daughter, who never hesitates to lend a hand to the family when the work becomes intense.

A Family Estate

The Domaine des Salamandres was established following a series of exciting discoveries during family outings in the Hemmingford valleys, the ancestral home, and the iconic Mount Covey Hill. This natural site offers a great diversity of woods, orchards, and vineyards, housing notably the largest variety of salamanders in Quebec's dark mountain ranges.

The creation of the business was like a second life, the realization of a dream that consisted of settling and cohabiting on this chosen land. Thanks to Sylvain's expertise acquired in a local orchard, they had the necessary foundations to cultivate vines. In 2006, Denise finally suggested starting in agriculture and officially founding the Domaine des Salamandres.

One year after the first vines were planted, a major frost destroyed half of their plants. However, their production model, already diversified between two crops, allowed them to limit the losses. Today, the estate is at the heart of their positioning and the distinction of the business: Domaine des Salamandres: wines and perry.

Fifteen years later, the estate offers visitors a privileged place to discover distinctive products. They work in harmony with the territory and the biodiversity that charmed them from the start.

The Québec Ice Wine from Domaine des Salamandres is an exceptional wine produced in the Québec region. This artisanal ice wine stands out for its perfect balance between sweetness and freshness, offering rich aromas of ripe fruit, honey, and delicate floral notes. Made from naturally frozen grapes, it is carefully crafted to preserve the purity of the Québec terroir. The Tabarnak! Ice Perry is an exceptional Québec ice wine made from naturally frozen pears during the harsh winters of Québec. This cuvée is distinguished by its cryoextraction production method, where the pears are in direct contact with the winter cold, requiring four times more fruit than for a classic perry. This perry offers delicate aromas of candied pear, honey, and white flowers, with a soft and liqueur-like texture. Perfect as a dessert wine or digestif, it reflects the unique artisanal expertise of Domaine des Salamandres.
