This is, to be exact, a brown sauce that is used to make a recipe called poutine. This recipe consists of fried cheddar cheese in grains (called "skouik-skouik") and therefore of brown sauce.
While poutine has long been denigrated for its simplicity, it is now recognized as a heritage of Quebec and has the honour of having its own festivals in Quebec City, Montreal, Drummondville and elsewhere.
